Coffee Cupping, the Basics


Cupping is the specific, standardized protocol the coffee trade uses to evaluate green coffee before it's bought, roasted or blended — a fixed procedure built so that a Kenyan exporter, a roaster in another country, and a quality-control lab can all taste the same lot the same way and arrive at scores that actually mean something next to each other. It looks unusual from the outside, but every deviation from an ordinary cup of coffee exists to remove a variable that would otherwise make comparison unreliable.

Why the protocol is this rigid

If two coffees are ground to different sizes, brewed at different ratios, or rested for different lengths of time before tasting, differences in the resulting cups could come from any of those variables rather than from the coffee itself. A standard cupping protocol removes almost all of that ambiguity: a fixed dose (commonly around 8.25 grams of coffee per 150ml of water, though exact figures vary slightly by which organization's protocol is used), a consistent medium-coarse grind, water just off boiling poured directly onto the grounds with no pre-infusion or bloom step, and a fixed rest time — typically four minutes — before the crust of grounds floating on top is broken and evaluated. Every cup in a session is prepared identically, which is the entire point: the method is deliberately unglamorous so that any differences a taster notices are differences in the coffee, not the brewing.

The actual sequence

Dry fragrance is smelled first, before any water touches the grounds — a distinct evaluation step most home tasting skips entirely, since it captures aromatics that dissipate the moment hot water hits the coffee. After the four-minute steep, the taster leans in close and breaks the crust with a spoon, releasing wet aroma that's evaluated separately from the dry fragrance. Foam and grounds are skimmed off the surface, and once the cup has cooled slightly, the taster takes a rapid, aerated slurp designed to spray the coffee across the palate and up into the retronasal passage in one motion, spits or swallows, and moves to the next cup. A single session typically works through several cups of the same coffee side by side, since any one cup can have a defect the others don't, and moves across multiple different coffees being compared at once — the direct side-by-side structure is as central to the method as any individual step.

Scoring, not just describing

Professional cupping usually produces a numeric score, most commonly on the Specialty Coffee Association's 100-point scale, built from category scores across attributes like fragrance/aroma, flavor, aftertaste, acidity, body, balance, sweetness and a deduction for any defects, then totaled. Coffee scoring 80 or above on this scale is generally the threshold used to call a lot "specialty grade" at all, which is why that number shows up so often in origin buying and marketing — it's not an arbitrary round figure but a specific, defined cutoff that this exact scoring process produces. A cupping score exists to support a buying or blending decision, not just to generate a number for a bag; a roaster deciding between two competing lots of similar washed Colombian coffee, for example, is using cupping scores and notes to make that specific commercial choice.

Why this differs from tasting a cup for pleasure

Cupping optimizes for comparability and defect detection, not for enjoyment — the protocol specifically avoids anything that would flatter or disguise a coffee's real character, including skipping a bloom, using a coarser-than-ideal grind for pure flavor extraction, and drinking the coffee at multiple temperatures as it cools rather than at the temperature that tastes best. A coffee that cups well is being judged on accuracy and lack of defect, which correlates with but isn't identical to which coffee you'd actually enjoy drinking on a given morning brewed your preferred way in your preferred method.

Running a version of this at home

You don't need certified cupping spoons or a lab setup to borrow the useful parts: brewing several coffees or several grind/ratio variations of the same coffee side by side, at a consistent ratio and rest time, and tasting them within minutes of each other while still warm reveals differences that are much harder to notice tasting one cup in isolation and trying to remember yesterday's from memory. This comparative structure, more than the exact ratios or spoon technique, is the part of professional cupping that actually transfers to a home kitchen.

Cupping-specific questions

Do I need special equipment to cup coffee? No — cupping bowls and spoons are standardized for professional consistency across many samples at once, but the underlying idea (fixed ratio, consistent rest time, side-by-side comparison) works with ordinary mugs and spoons at home.

What does an 80-point score actually mean? It's the Specialty Coffee Association's defined threshold for calling a lot "specialty grade" on their 100-point cupping scale — below it, a coffee is generally considered commodity grade regardless of how it tastes to any individual drinker.

Why do cuppers spit instead of swallow? Volume and caffeine load — a working cupping session can involve dozens of samples in a row, and swallowing all of them isn't physically practical, the same reason wine tasters spit at a large tasting.

Is a high cupping score a guarantee I'll like the coffee? Not necessarily — cupping measures technical quality and absence of defects against a standardized process, while personal preference for acidity, body or particular flavor notes is a separate axis entirely.
