Pour-over is filtration under gravity: water passes through a bed of ground coffee once, picks up dissolved solids and oils on the way, and drains through a paper filter that catches the grounds and most of the fine particulate. Everything about how a V60, a Kalita Wave or a basic plastic cone behaves comes back to that one sentence — because gravity is a weak, uneven force, how the water moves through the bed matters as much as how much water you use.
The bloom, and why it isn't optional
Fresh coffee holds a surprising amount of trapped carbon dioxide from roasting, and CO2 released into water pushes back against it, blocking even saturation. Pouring roughly twice the coffee's weight in water, waiting 30–45 seconds, and letting that gas escape before the main pour is what "blooming" does. Skip it on fresh, dark-roasted coffee in particular and you'll see bubbling and uneven wetting straight through the main pour — patches of dry grounds sitting at the edge of the filter that never really extract, next to a channel where nearly all the water forced its way through in seconds. Very old, stale coffee blooms less dramatically simply because it has less gas left to release; that's a freshness signal in itself.
Pour in stages, not once
A single continuous pour tends to bulldoze a crater into the bed, concentrating flow through the middle and starving the edges. Two or three smaller pours, each allowed to draw down partway before the next, keep the bed more evenly saturated and give you a chance to correct course if the first pour clearly went wrong. Pour in slow, gentle circles rather than a hard jet straight down the center — agitation from a fast pour can dislodge fine particles into the filter and slow the whole drain, or push water straight past the coffee near the walls of the dripper.
Grind size is the dial, drawdown time is the readout
For most pour-over cones, a medium-fine grind — noticeably finer than table salt, finer than what you'd use for a French press — with a total drawdown (from the start of the bloom to the last drops through the filter) landing somewhere around 2.5 to 4 minutes is a reasonable target for a 20g dose. If your coffee finishes well under that window, water found the path of least resistance too easily: grind finer. If it's still dripping well past it, the bed is too fine or too disturbed and is choking its own flow: grind coarser. The two failure modes that look alike but aren't
Channeling is a crack or gap in the coffee bed that lets water rush through with almost no contact time, usually from an uneven pour or a bed that was disturbed after the bloom. It shows up as a cup that's simultaneously sour in places and bitter in others, because different parts of the bed extracted to wildly different degrees. A stalled bed, the opposite problem, is fine particles clogging the filter itself, usually from grinding too fine for the paper you're using or from a burr grinder producing more fines than a blade grinder of the same nominal setting. Both end a brew "on time" by the clock in completely different states — one drains too fast, the other crawls — which is why drawdown time alone isn't a perfect diagnostic without also watching how the bed looks as it drains.
Filter choice changes the cup more than people expect
Bleached (white) and unbleached (brown) paper filters extract almost identically once rinsed, but an unrinsed unbleached filter can carry a papery taste into the cup — always pour a rinse of hot water through the empty filter and dripper before adding grounds, both to eliminate that and to preheat the vessel the coffee will land in. Thicker filters, like the ones bundled with a Kalita Wave or a Chemex, restrict flow more and run slower at the same grind size than a thin V60 filter, which is part of why a Chemex recipe tends to call for a coarser grind than a V60 recipe at a similar ratio.
Water temperature matters less than grind, but it isn't nothing
Something in the 195–205°F (90–96°C) range is the conventional window; near boiling water can scald delicate light roasts into sharp, one-note bitterness, and water that's dropped well below that range under-extracts sweetness and body along with the bitterness you were trying to avoid. If you don't own a temperature-controlled kettle, boiling and waiting 30–45 seconds before pouring gets ordinary tap water into a reasonable part of that window.
Which dripper, and why it changes the recipe
"Pour-over" covers a family of drippers with genuinely different flow characteristics, which is why a recipe tuned for one can taste off in another even at the same ratio. A V60's spiral ribs and large single hole let water drain fast, which is why V60 recipes tend to run a slightly finer grind to hold enough contact time. A Kalita Wave's flat bed and three small holes drain more evenly and more slowly by design, which is more forgiving of an uneven pour but wants a grind on the coarser side of medium-fine to avoid stalling. Common mistakes, in order of how often they actually happen
- Grinding for the wrong dripper. A grind dialed in for a fast-draining V60 will often stall in a slower Kalita Wave, and the fix is a coarser grind for the slower dripper, not a longer wait.
- Pouring too fast in one pass. This is the single most common cause of channeling on a first attempt — slow down and circle the pour rather than dumping the kettle in one go.
- Skipping the filter rinse. A papery, muted flavor that people often blame on the beans is frequently just an unrinsed filter.
- Judging by the clock instead of the bed. A brew that finishes "on time" can still have channeled badly in the middle; watch the bed itself, not only the stopwatch.
- Using boiling water straight off the kettle. On a light roast especially, this reads as sharp and bitter in a way that's easy to mistake for a grind problem.
A note on grinders
Burr grinders produce a far more even particle size than blade grinders, and that consistency matters more for pour-over than almost any other method, because a wide spread of particle sizes means fine particles over-extracting and slow-draining at the same time coarse particles are under-extracting — the exact channeling-adjacent mess described above, just distributed through the whole bed rather than localized to one crack. If you're using a blade grinder, pulsing in short bursts and shaking the grounds between pulses gets you closer to even, though it will never match a decent burr grinder's consistency.
