Light, Medium and Dark Roast, Explained
Roast level describes how long and how hot green coffee beans were heated before the flavor compounds present at harvest are converted, in large part, into a different set produced by roasting itself. It isn't a marketing category — it corresponds to a measurable internal bean temperature and a set of audible and visual milestones, and it changes the cup in ways that are consistent enough to predict.
What actually happens inside the bean
Green coffee is dense, grassy-smelling and essentially undrinkable. As it roasts, sugars caramelize, Maillard reactions between sugars and amino acids build the toasted, bready aromatics roasted coffee is known for, and the bean's cell structure breaks down, releasing carbon dioxide and oils. Two audible "cracks" mark the major transitions: first crack, around 385–405°F (196–207°C) internal temperature, sounds like a popcorn pop and is where coffee crosses from undrinkable to a roast most people would recognize as coffee. Second crack, roughly 20–30°F higher, is a quieter, higher-pitched crackle and marks the beginning of the darker end of the spectrum, where roast-derived bitterness starts to dominate origin character.
Light roast: origin character, brighter acidity
Light roasts are pulled shortly after first crack. The bean stays dense, dry-looking (no surface oil) and light tan to medium brown. Because the roast hasn't run long enough to convert or mask much of what was already in the green bean, light roasts carry the most origin-specific flavor — the floral notes of a washed Ethiopian, the citrus of a washed Kenyan — along with more perceived acidity, which reads as brightness rather than sourness when the coffee is otherwise well brewed. Light roasts are also denser, which is part of why grind size and brew ratio recommendations sometimes nudge slightly finer or stronger to extract them fully; under-extracted light roast is the single most common cause of a sour cup that the drinker blames on the beans rather than the brew.
Medium roast: the balanced middle
Somewhere between first and second crack, medium roasts trade some origin specificity for more body and a rounder, less acidic profile. This is the range most drip coffee and most "house blend" bags default to, in part because it's forgiving of the exact brew parameters and tastes recognizably like coffee to the widest range of people. Origin character is still present, just softened relative to a light roast of the same bean.
Dark roast: roast character over origin character
Past second crack, roast-derived flavors — bittersweet, smoky, sometimes carbon-like at the darkest end — increasingly dominate whatever the bean tasted like before roasting. The surface turns visibly oily as cell walls break down further and release oils that would otherwise stay locked inside the bean. Dark roasts lose density and mass through the roast (more moisture and mass driven off as gas), so a given volume of dark roast grounds actually contains less bean mass than the same volume of light roast — a detail that matters if you're measuring by scoop rather than by weight. Dark roast is not inherently "stronger" in caffeine; if anything, the longer roast time very slightly reduces caffeine content, though the difference is small enough that method and dose matter far more than roast level for how much caffeine ends up in your cup.
The trade-off, stated plainly
Roasting further doesn't add flavor complexity indefinitely — it replaces origin character with roast character, and past a certain point it replaces roast character with bitterness and, at the extreme, an ashy, burnt taste that few people actually enjoy (see the ashy coffee fix if that's what you're getting). There's no objectively correct roast level; a naturally processed specialty bean roasted dark is arguably wasting what made it distinctive, while a commodity-grade robusta blend roasted light can taste thin and grassy with nothing pleasant to reveal. Matching roast level to what the bean actually has to offer, and to what you personally like, matters more than chasing a number.
Roast level and brewing method
Darker roasts are more brittle and grind slightly finer at the same grinder setting than lighter roasts of the same bean, which is one reason a recipe that works on one roast level can drift slightly when you switch beans. If a cup tastes bitter after a roast-level change with everything else held constant, try coarsening the grind slightly before assuming your technique broke — the roast itself may be doing more of the work than you expect, and the ratio pages on this site assume a medium roast unless a specific page says otherwise.
Reading a bag without roaster jargon
Some bags print a number or a light/medium/dark label directly; others only give a roast date and a flavor description. Tasting notes that lean toward "citrus," "floral" or "berry" are a reliable signal of a lighter roast even without a label, since those flavors don't survive much past first crack. Notes that lean toward "chocolate," "nutty" or "caramel" suggest medium. "Smoky," "bold" or "bittersweet" point to dark. None of this is a substitute for tasting it yourself, but it's a useful first guess before you've brewed a single cup.
