Washed, Natural and Honey Processing


A coffee cherry is mostly fruit — skin, pulp and a sticky layer called mucilage — wrapped around two seeds, which become the beans that get roasted. How a producer removes that fruit, and how much of it is allowed to ferment against the seed before drying, changes the cup more dramatically than almost any other decision made before roasting, which is why processing method is listed on specialty bags as prominently as origin or varietal.

Washed (wet) process: fruit off before drying

Cherries are mechanically depulped shortly after picking, stripping off the skin and most of the pulp but leaving a thin layer of sticky mucilage still clinging to the seed. That mucilage is then removed either by fermenting the beans in water-filled tanks for roughly 12 to 48 hours (naturally occurring enzymes and bacteria break the mucilage down until it washes off cleanly) or by mechanical demucilaging equipment that scrubs it off directly. The beans are then washed clean and dried, with minimal fruit sugar ever having contact with the seed. The result is the cleanest, brightest, most acidic cup of the three processes, and the one that most directly showcases a bean's own origin and varietal character rather than fruit-fermentation flavor layered on top — which is why washed processing is the default choice when a producer wants to highlight a particularly distinctive terroir.

Natural (dry) process: the whole cherry dries intact

Here, the cherry isn't depulped at all before drying. Whole cherries are spread out, usually on raised beds, and turned regularly over roughly two to four weeks as they dry in the sun, fruit and all, around the seed inside. During that extended drying period, the fruit's sugars slowly ferment directly against the bean, and the bean absorbs compounds from the fruit as it dries — producing a cup with heavier body, pronounced fruity or winey notes, and often lower, less sharp acidity than a washed version of the same bean. Natural processing is also the most variable of the three, since drying conditions, cherry ripeness and turning consistency all affect the outcome more directly when there's no washing step to standardize things afterward; a well-executed natural can taste distinctly like strawberry or wine, while a poorly executed one can taste fermented in an unpleasant, boozy way.

Honey process: a deliberate middle ground

Honey-processed coffee is depulped like a washed coffee, removing the skin, but some or all of the sticky mucilage is deliberately left on the seed during drying rather than washed off — the "honey" in the name refers to that sticky mucilage layer, not to any actual honey being involved. How much mucilage stays on is a spectrum, and producers often label it by color: yellow honey leaves the least mucilage and dries fastest, closest to washed in character; red honey leaves more and dries more slowly; black honey leaves the most mucilage on and requires the longest, most carefully managed drying, producing the heaviest body and sweetness of the three honey variants, closest to a natural in character without going all the way to whole-cherry drying. Honey processing generally lands between washed and natural in the cup — more body and sweetness than washed, cleaner and less fermented-tasting than natural — which is exactly the point of the technique.

Why this matters more with some varietals and origins than others

A bean already carrying strong inherent character — a Gesha's floral aromatics, for instance — can have that character either sharpened by washed processing or partly obscured under a natural's heavier fruit-forward profile, so producers working with distinctive lots often choose washed processing specifically to let the varietal speak clearly. Origins with a strong natural-process tradition, like much of Ethiopia and Brazil, have built entire regional flavor identities around it — Ethiopian naturals in particular are known for blueberry and strawberry notes that a washed Ethiopian of the same varietal wouldn't show at all. Neither tradition is more "correct"; they're different tools aimed at different flavor outcomes.

A less common fourth approach worth knowing

Some producers use "wet-hulled" or "giling basah" processing, most associated with Indonesian coffees like Sumatra, in which parchment-covered beans are hulled while still relatively high in moisture rather than fully dried first, then finished drying afterward. This produces the distinctively low-acid, heavy-bodied, earthy and sometimes herbal character Sumatran coffee is known for — a flavor outcome specific to that processing quirk as much as to the region itself, and different enough from washed, natural or honey that it's often treated as its own category rather than a variant of one of the three.

What to expect when a bag names its process

A washed bag is the safer bet if you want clean, bright, high-acidity coffee that reads clearly by origin — see the origin flavor profiles on this site for how that plays out region by region. A natural is worth seeking out if you want a heavier, more fruit-forward, dessert-like cup and don't mind more variability bag to bag. Honey-processed coffee is a reasonable middle choice if you're unsure which direction you prefer, or if you specifically want more body and sweetness without natural processing's more polarizing fermented notes.
