Muddy, Cloudy Coffee
A muddy cup — cloudy rather than clear when held up to light, with a heavier, silty texture that coats the tongue unpleasantly rather than the pleasant fullness of a well-made French press — almost always comes down to fine particles slipping past a paper filter that should have caught them. This is specifically a filter-method problem. Immersion brewing separates grounds from liquid at the very end with a mesh or metal screen that was never going to catch every fine particle in the first place, so a French press has some sediment by design; a pour-over, Chemex, V60, Kalita Wave or drip machine is supposed to run clear, and muddiness there is a sign something went wrong upstream.
Grind coarser to cut the fines
Every burr grinder produces a spread of particle sizes around its target setting, not one uniform size, and grinding finer widens that spread in absolute terms — more very small "fines" alongside the intended particle size. Those fines are small enough to work through the gaps in a paper filter's fibers, especially once the filter is saturated and slightly swollen partway through the brew. Backing off to a coarser grind reduces the total number of fines generated in the first place, which is the most direct fix.
Check the filter is actually sealed
A paper filter that isn't fully seated against the dripper's walls leaves a gap where water can run down the side of the filter rather than through the coffee bed and paper both — carrying loose fines and unfiltered liquid straight into the cup with it. Fold the filter's seam flush against the dripper before adding coffee, and pour the rinse water in a way that presses the filter into full contact with the dripper's ribs or walls rather than just wetting the coffee. This is a five-second check that fixes a surprising fraction of muddy cups that grind adjustments alone won't touch, because the problem isn't fines at all — it's fines with a direct bypass route.
Grinder quality changes how often this happens
A blade grinder chops coffee unevenly by nature, producing a much wider range of particle sizes — including a disproportionate amount of near-powder fines — than a burr grinder set to the same nominal coarseness. If muddiness persists after grinding coarser and checking the filter seal, the grinder itself may be the limiting factor; a decent burr grinder at a slightly finer setting will often run cleaner than a blade grinder backed off as coarse as it can reasonably go.
Filter thickness and brand matter too
Thicker filters — the kind bundled with a Kalita Wave or a Chemex — trap more fines by design than a thin V60-style filter, which is part of why a Chemex can run a slightly finer grind than its filter thickness alone would suggest and still pour clear. Switching to a thicker filter paper is a legitimate fix if your dripper's stock filters run thin and your cup is consistently cloudy even at a reasonable grind.
Water pressure and pour speed on drip machines
An automatic drip machine's spray head can hit the bed harder than a hand pour ever would, especially on cheaper machines that dump most of the water in a short burst rather than spreading it evenly across the brew cycle. That burst can dislodge the same fines a fast hand pour would, and there's no pour technique to adjust on a machine you don't control drop by drop — dialing the grinder one notch coarser than you'd run for an equivalent hand pour-over is the practical way to compensate for a spray head you can't slow down.
Try these, in order of likely impact
- Grind one or two steps coarser and brew the same way otherwise.
- Check the filter is fully seated with no gap at the seam or the dripper's edge.
- If it's still cloudy, consider whether a blade grinder is producing more fines than a burr grinder would at the same setting.
- Try a thicker filter paper if your current one runs thin for your dripper.
Muddy is a filter problem; gritty is a sediment problem
Muddiness and grittiness get confused because both feel like "something's wrong with the texture," but they're different failures on different methods. Muddy coffee is cloudy fines that made it through a paper filter that should have stopped them. Gritty coffee is actual sediment settled at the bottom of a cup from a method that never used a paper filter to begin with — French press, Turkish coffee, Vietnamese phin, a percolator — and the fix there is about settling and pouring technique, not filter seating, since there's no paper filter in the loop to seat correctly.
