Slow Pour-Over Drawdown
Drawdown is the drain time of a filter brew — from the start of the bloom to the last drops through the paper — and it's the closest thing pour-over has to a built-in diagnostic, because a bed that's draining at a reasonable pace is usually extracting at a reasonable rate too. A slow drawdown, well past the conventional two-and-a-half to four-minute window for a normal single-cup dose, means water is meeting more resistance getting through the bed than it should, and that resistance has a short list of actual causes. This applies to pour-over, Chemex, V60, Kalita Wave and the Clever Dripper — methods that drain by gravity through a bed and a paper filter — not to French press or espresso, which don't have an equivalent drawdown to time.
Grind coarser
A finer grind packs more total surface area, and more surface area into the same bed volume also means smaller gaps between particles for water to move through — the same property that raises extraction also raises flow resistance. If the grind has crept finer than it should be for your dripper, coarsening it is both the most likely fix and the one that addresses the taste consequence at the same time, since a slow drawdown from an over-fine grind is also quietly over-extracting the cup into bitterness the whole time it's stalling.
Check you aren't over-agitating the bed
A heavy, fast pour — especially one aimed straight down the center rather than in slow circles — can knock fine particles loose from larger grounds and wash them down into the bed, where they settle into the gaps between particles and choke flow much the way an over-fine grind does. This is a common cause of a slow drawdown that persists even after you've coarsened the grind, because the problem isn't the grind size itself but agitation creating fines during the pour that wouldn't otherwise be there. Pouring in a slower, gentler spiral rather than a single forceful stream reduces this.
Filter thickness and paper type
A thicker filter — the kind bundled with a Kalita Wave or Chemex — restricts flow more than a thin V60-style paper at the same grind size, which is by design and part of why those methods conventionally use a slightly coarser grind than a V60 to compensate. If you've switched filter brands or paper weight without adjusting grind, that alone can turn a previously fine drawdown time into a stalled one.
Bloom technique matters more than people expect
Skipping the bloom, or pouring the main volume immediately after a very short bloom, means trapped carbon dioxide is still actively pushing back against water trying to enter the bed evenly, which can slow and unevenly stall the drain in a way that looks like a grind problem but isn't. Giving fresh coffee a full 30–45 second bloom before the main pours lets most of that gas escape first, so the rest of the brew drains through a bed that isn't actively fighting the water on its way in.
Water temperature can be a hidden factor
Water well below the conventional 195–205°F window is more viscous and moves through a packed bed slightly more sluggishly than hotter water does, which can add real seconds to a drawdown that's already borderline. This is rarely the whole story on its own, but on a kettle without temperature control, checking that the water hasn't cooled too far while you were weighing and grinding is worth doing before concluding the grind itself is the problem.
Where to start
- Grind one or two steps coarser than you have been.
- Slow down and circle your pour instead of pouring hard and fast down the center.
- Check your filter hasn't changed brand or thickness recently.
- Make sure fresh coffee gets a full 30–45 second bloom before the main pour.
The opposite problem
A drawdown that finishes too quickly rather than too slowly is the mirror image of this — water moving through the bed with too little resistance rather than too much — and it calls for the opposite grind adjustment.
