Coffee That's Too Strong
"Too strong" and "bitter" get used interchangeably by people describing a bad cup, but they describe different properties of it. Strength is how much dissolved coffee is packed into the water — a concentration question, driven mainly by how much coffee you used. Bitterness is about which specific compounds dissolved during extraction, driven by grind, time and temperature. A cup can be intensely strong and still be well-balanced and pleasant, the same way a double espresso is stronger than a single without being twice as bitter. If your cup is overwhelming in a heavy, mouth-coating, "too much coffee" way rather than a harsh or lingering way, the dose is the more likely culprit.
Use less coffee for the same water
Moving the ratio toward the "light" preset for your method — roughly 1:17 to 1:18 for pour-over, 1:17 for French press, closer to 1:2.5 by yield for espresso — reduces how much dissolved coffee ends up in the cup without touching how that coffee was extracted. This is the direct fix, and it's worth trying before anything else, especially if you've been measuring by scoop rather than weighing: an overfilled scoop is a common, easy-to-miss cause of consistently over-strength coffee.
If cutting the dose isn't quite enough
Grinding slightly coarser lowers extraction efficiency, pulling a bit less total dissolved mass out of whatever dose you're using — a smaller, secondary effect compared to changing the ratio, but a useful second lever if the cup is close but still a little heavy after you've already backed off the dose.
Concentrated methods people accidentally drink at full strength
Some brewing methods are designed to be diluted, and "too strong" is sometimes really "I forgot to dilute it." Moka pot output is roughly espresso-strength and traditionally served in small cups or cut with hot water or milk — drinking a full moka pot's yield straight, at the volume of a regular mug, will taste overwhelmingly strong regardless of grind or ratio, because it was never meant to be consumed at that concentration undiluted. Cold brew concentrate has the same issue in reverse direction: a proper cold brew steeped at 1:8 or stronger is a concentrate meant to be cut roughly 1:1 with water or milk before drinking, and skipping that step produces a genuinely too-strong cup even though the brew itself was made correctly. Turkish coffee and Vietnamese phin coffee are both intentionally brewed strong and served in small volumes as a matter of tradition, not a mistake to correct — matching the serving size to the method matters as much as the ratio itself.
When it actually is a bitterness problem wearing "strong" as a disguise
If the coffee tastes not just intense but harsh, dry or lingering unpleasantly at the back of the throat, that's extraction chemistry rather than dose — see bitter coffee for the grind-coarser, shorten-the-brew fix that actually addresses that specific complaint, since cutting the dose alone won't remove bitterness that's already dissolved into the cup.
Instant coffee has its own version of this
Instant granules dissolve completely, so there's no grind or extraction lever available at all — strength is purely a function of how many granules go into how much water. If instant coffee tastes overwhelming, the fix is entirely at the mixing step: use fewer granules for the same volume of water, check the package's serving guidance, and adjust from there by taste rather than by habit, since a heaping spoon can easily run well past what the package assumes.
The adjustments, in order
- Weigh your dose rather than scooping, and check it against the actual water volume you're brewing.
- Move toward the "light" ratio preset for your method.
- If a concentrated method (moka pot, cold brew, Turkish, phin) is involved, check whether it's meant to be diluted before you touch the recipe at all.
- If it's still heavy after cutting the dose, grind slightly coarser.
- If the complaint is really harshness rather than intensity, treat it as bitterness instead.
Too strong is the mirror of weak, not of bitter
Weak coffee is the direct opposite of this page — same axis, same fix in reverse: more coffee instead of less. Bitterness sits on a genuinely different axis, driven by extraction rather than dose, which is why a coffee can be simultaneously weak and bitter (a thin cup that's also harsh, from a bad grind at a low dose) or strong and perfectly balanced (a well-made double espresso).
