Cold Brew: The Full Method Guide

Cold brew swaps heat for time. Hot water extracts coffee's soluble compounds quickly because heat accelerates the chemistry; cold or room-temperature water extracts the same compounds far more slowly, so cold brew compensates with a steep measured in hours rather than minutes — typically 12 to 24 hours of full immersion, coarse grounds sitting in cold water with no heat source involved at all. The slower, cooler extraction pulls proportionally less of certain acidic compounds than a hot brew does at a comparable strength, which is the real, chemical reason cold brew tastes smoother and less sharp rather than "less acidic" in some vague sense — the acid profile it does extract is just a different mix.

This is a concentrate recipe, and treating it as one matters

Most cold brew recipes are built to produce a concentrate meant for dilution, not a drink-strength result straight out of the jar. A common steeping ratio runs from around 1:8 for a strong concentrate down toward 1:5 for an even more intense one, and that concentrate then gets cut with water, milk or ice roughly one part concentrate to one part dilutant before drinking. Skipping the dilution step and drinking straight concentrate produces a cup that's far stronger than most people actually want; drinking it undiluted isn't wrong, but it's worth being a deliberate choice rather than an accident from not knowing the recipe assumed a cut.

Grind matters far less here than on any percolation method

There's no flow rate to protect and no channeling risk in a jar of coffee steeping for a full day, so cold brew is the most forgiving method on this site when it comes to grind consistency. What grind size does still control is filtration difficulty and clarity: too fine, and the steep produces enough fine sediment that straining it cleanly becomes a real chore, with fines slipping through a mesh bag and clouding the concentrate. A coarse grind, similar to or slightly coarser than French press, extracts fully over the long steep while staying easy to filter out afterward.

Steep time is the dial that actually shapes flavor

Within the 12–24 hour window, a shorter steep (12–16 hours) tends to produce a brighter, slightly more acidic concentrate, while pushing toward 20–24 hours pulls further into fuller body and lower perceived acidity, up to a point — steeping well past 24 hours risks pulling in vegetal, papery notes as extraction runs past where the good flavors peak, the same over-extraction principle as any other method, just operating on a timescale of hours instead of minutes. Room temperature and refrigerator steeping both work; a fridge steep runs slower and typically wants the longer end of the window to reach a comparable strength.

Filtering it out is its own step, not an afterthought

A simple mesh bag or nut-milk bag catches the bulk of the grounds but usually lets enough fine sediment through that a second pass through a paper filter or coffee filter noticeably clears the result — worth doing if you're bottling concentrate to keep for a week rather than drinking it the same day, since sediment left in the concentrate keeps interacting with the liquid and can shift the flavor slightly during storage.

Serving it hot is a real option, and changes almost nothing about the brew

Cold brew describes the extraction temperature during steeping, not the serving temperature afterward — a concentrate steeped cold can be diluted with hot water instead of cold water or ice and served as a hot drink with the same smooth, low-acid character the cold steep produced. This surprises people who assume "cold brew" and "iced coffee" are the same thing; iced coffee is usually just hot-brewed coffee poured over ice, with the sharper acid profile of a hot extraction intact, while true cold brew gets its distinct flavor from the steeping temperature regardless of how it's finally served.

Batch size changes filtration time more than it changes the steep

A small jar and a full five-gallon batch steep on the same clock — 12 to 24 hours doesn't scale with volume the way you might expect a hands-on brew method to. What does scale is how long straining takes, since a large batch pushed through a small mesh bag or paper filter takes considerably longer to fully strain than a single mug's worth, which is worth planning for if you're brewing a week's supply at once rather than assuming the process finishes as quickly as a small test batch did.

The concentrate mix-ups that catch people out

  • Drinking the concentrate undiluted and calling it "too strong." The recipe assumed a cut with water or milk — see watery cold brew for the flip side of this same ratio confusion, where someone diluted a batch that was never brewed strong enough to survive dilution.
  • Grinding too fine. Not an extraction problem the way it is on a pour-over, but a filtration headache — cloudy concentrate and clogged filters trace back to this almost every time.
  • Steeping well past 24 hours "for a stronger brew." Time past that window adds flatness and vegetal notes more than it adds useful strength; a higher ratio of coffee to water is the correct way to brew stronger, not more hours.
  • Using warm tap water to "help it along." This isn't a bad idea in the sense of ruining the batch, but it's no longer cold brew's slow-extraction chemistry at that point — it becomes a long, lukewarm steep with its own, less predictable extraction curve.

Cold brew concentrate also keeps considerably longer than a hot-brewed pot of coffee — refrigerated in a sealed container, a well-strained batch stays reasonably fresh for one to two weeks, since the lower temperature and lack of oxidation from repeated reheating that degrades hot coffee within hours simply don't apply here. That shelf life is part of the method's actual appeal beyond flavor: brewing once on a Sunday for a week's worth of coffee is a realistic plan with cold brew in a way it isn't with any hot-brewed method on this site.

Cold brew's closest relative on this site, by steeping mechanism, is nitro cold brew, which starts from the same long steep and adds a pressurized nitrogen dispense afterward — the steep chemistry described here applies to both. Against French press, cold brew takes full immersion to an extreme most people don't associate with "brewing" at all.
