Instant coffee's ratio numbers look nothing like the rest of this site: roughly 1:130 balanced, climbing to 1:90 for something bold or thinning out past 1:170 for something faint. That's because there's no extraction happening at the moment you make it. The coffee was already brewed and then dried, into either a spray-dried powder or a freeze-dried granule, at a factory well before it reached your jar. What you're doing with hot water is dissolving that dried coffee back into liquid form, not pulling anything new out of it.

Why the numbers are so large

Every other method on this site measures how much ground coffee it takes to flavor a given amount of water through extraction, which needs a real dose — 15 to 30 grams for most filter methods. A 2g dose of instant coffee, already fully extracted and concentrated by the drying process, does the same flavoring job with a fraction of the mass, which is exactly why its ratio number is an order of magnitude higher than a brewed method's: the divisor is large because the numerator is tiny, not because the drink is unusually weak.

What the dissolution numbers actually mean

At 1:130, a 2g dose (roughly one rounded teaspoon) dissolves into 260ml of hot water. At 1:90, for a stronger cup, into 180ml. At 1:170, for something lighter, into 340ml. Because there's no extraction curve to manage, there's no wrong contact time or grind to worry about — just how much powder or granules you stir into how much water, entirely a matter of taste rather than a brewing variable.

The teaspoon is a less reliable unit than it looks

Freeze-dried granules are considerably less dense than spray-dried powder, so a level teaspoon of one brand can weigh noticeably less than a level teaspoon of another even though both claim to make "one cup" — the 2g reference dose on this page is a reasonable average, not a fixed constant across every jar on a shelf. Water temperature matters differently here too

Because nothing is being extracted, instant coffee dissolves fine in water well below the 195-205°F window every brewed method on this site cares about — even warm tap water will dissolve it, though hotter water dissolves it faster and more completely, leaving fewer undissolved granules floating on top. This is a solubility question, not an extraction-temperature one.

Adjusting strength

Move toward 1:90 for a bolder cup, useful in recipes calling for concentrated instant coffee like some baking uses. Move toward 1:170 for something gentle. There's no failure mode here that resembles bitterness or sourness from a ratio mistake — too much reads simply as too strong, and too little as weak coffee-flavored water, nothing more specific than that.

Where instant coffee still overlaps with brewed methods

Instant granules dissolved stronger than usual, closer to the 1:90 end, are sometimes used as a quick flavoring base in recipes or stirred into cold milk for an improvised iced drink, which works precisely because there's no grind or extraction step standing in the way — you're free to treat the ratio purely as a strength dial with none of the flow, drawdown or channeling considerations every brewed method on this site has to account for.
