A percolator asks for noticeably more coffee per liter of water than a drip machine or pour-over: 1:12 balanced, tightening to 1:10 for old-fashioned intensity or loosening to 1:14 toward filter-coffee territory. The reason isn't taste preference, it's mechanics. A percolator doesn't pass water through the grounds once; it pumps the same water up a central stem and back down through the basket repeatedly for the entire brew cycle, so the ratio has to account for a lot more total extraction time than a single-pass filter method ever sees.

Why repeated passes change the math

Ten to fifteen minutes of a percolator cycling near-boiling water through a coarse grind extracts considerably more from the same coffee than three or four minutes of a single pour-over pass would, even at an identical dose. A ratio calibrated for drip coffee, used in a percolator, tends to come out bitter and over-extracted — which is a large part of percolator's old reputation for harsh coffee. The lower ratio here (more coffee, less relative water) isn't compensating for a weaker method; it's compensating for one that extracts unusually efficiently by cycling the same water repeatedly.

The basket has a real ceiling, like a moka pot's

Percolator baskets have a fixed volume, and while it's less rigid a constraint than a moka pot's sealed boiler, overfilling the basket restricts the stem's water flow and can stall the cycle or push grounds up past the basket's lid. A 30g dose is typical for a mid-size stovetop or electric percolator; check your basket's fill line before assuming you can scale the dose arbitrarily upward for a bigger batch.

The numbers at a 30g basket dose

At 1:12, a 30g dose calls for 360ml of water. At 1:10, 300ml, for a stronger, more traditional "camp coffee" cup. At 1:14, 420ml, for something closer to filter-coffee strength, though this is close to the edge of what a percolator's extended cycling can handle before turning bitter regardless of dose. Cycle length matters more than it does on other methods

Unlike a pour-over, where a slightly longer drawdown is a minor issue, a percolator left cycling past its intended time keeps extracting the whole time it's on the heat — pulling it at the right point matters as much as the ratio itself. Many electric percolators cycle automatically and shut off or drop to a warming temperature; stovetop versions need to be watched and removed from heat manually, which is the more common source of "percolator coffee is always bitter" complaints than the ratio is.

Moving off balanced

Reach for 1:10 for the fullest, most traditional percolator character. Reach for 1:14 only if you're deliberately trying to soften the method's natural intensity, and expect to shorten the cycle time slightly alongside it if bitterness still shows up.

Camp and stovetop percolators run slightly differently

A percolator used over an open flame or camp stove is harder to control than an electric one with a thermostat, and cycle length tends to run longer and less predictable outdoors — which is worth knowing before assuming a stronger ratio alone will fix coffee that's turned out bitter at a campsite. Pulling it off the heat a minute or two earlier than you would at home often matters more than adjusting the dose.
