What Crema Actually Is


Crema is the reddish-tan foam that sits on top of a properly pulled shot of espresso, and it's often treated as a quality signal — thick, persistent crema reads as "good espresso" to a lot of people, thin or absent crema as "bad espresso." The chemistry behind it tells a more complicated story, and one worth knowing if you've ever chased a thicker crema at the expense of a shot that actually tasted better.

Where crema actually comes from

Roasting coffee generates carbon dioxide, most of which escapes the bean in the days after roasting but some of which stays trapped inside the bean's cell structure. Espresso is the one common brewing method that forces hot water through coffee under real pressure — typically around 9 bar — and that pressure, combined with the fine grind and short contact time, extracts oils and releases the trapped CO2 in a way that emulsifies into tiny bubbles as pressure drops back to atmospheric the instant the shot exits the portafilter. The foam is essentially the same phenomenon as the head on a poured beer: gas trapped in solution comes out of solution rapidly and gets caught in a film of oil and surfactant-like coffee compounds before it can fully escape as loose bubbles.

Why crema fades

Crema is inherently unstable — it's a temporary suspension, not a stable structure, and it starts visibly thinning and breaking apart within a couple of minutes of the shot finishing. This is completely normal and not a sign the espresso has gone bad; a shot with genuinely excellent flavor can have crema that's already noticeably thinned by the time you've walked it from the machine to a table, which is one reason baristas taste and evaluate espresso quickly rather than treating crema persistence as an ongoing quality check throughout the drink.

More crema doesn't mean better espresso

Freshly roasted coffee produces noticeably more crema than coffee that's rested for a couple of weeks, simply because there's more trapped CO2 available to release — which means a very thick, foamy crema can actually indicate coffee that's slightly too fresh and still de-gassing heavily, sometimes at the cost of a slightly unstable, gassy shot that's harder to extract evenly. Conversely, coffee roasted more than a month or so earlier produces thin or minimal crema even when pulled and extracted correctly, simply because most of the available CO2 has already escaped in storage. Judging shot quality by crema thickness alone can point you toward chasing a variable that mostly reflects the age of the beans rather than the skill of the extraction.

Robusta muddies the comparison further

Robusta coffee contains more of the oils and surface compounds that stabilize foam than Arabica does, and produces a noticeably thicker, more persistent crema as a direct result — which is part of why cheap espresso blends sometimes include a small percentage of Robusta, deliberately trading some of Arabica's flavor complexity for a more visually impressive, longer-lasting crema. A shot with dramatic, tiger-striped crema isn't necessarily a better cup; it may simply contain more Robusta, or beans that are unusually fresh, or both, none of which is the same claim as "extracted correctly" or "tastes good."

What crema color and texture can tell you

While thickness alone is a weak signal, color and pattern are more informative. Even, reddish-tan crema with fine, tight bubbles generally indicates a reasonably even, well-extracted shot. Very pale, thin, white-ish crema that disappears almost immediately often points to under-extraction — too coarse a grind, too little coffee, or water that's run through too fast. Dark, blotchy crema with large bubbles, or crema with visible dark spots, can indicate channeling, where water found an uneven path through the puck rather than passing through evenly — see the channeling page for what actually causes that and how to fix it. Crema itself tells you something worth reading, just not the single, simple "more is better" story it's often given credit for.

If your espresso has no crema at all

A shot with genuinely no crema, rather than just thin crema, usually points to something more specific than a normal aging curve — stale beans well past their useful window, water that's too cool to build pressure properly, or a machine or grind problem preventing real pressure from developing at all. Crema questions worth clearing up

Does no crema mean the espresso is bad? Not automatically — very stale beans commonly produce thin or absent crema even when the shot is otherwise extracted correctly, so age is worth checking before assuming a technique problem.

Why does my espresso have less crema than a café's? Café espresso is often pulled from beans roasted within the last one to three weeks specifically because that window produces the most crema; home beans that have sat longer, or that were roasted for filter brewing rather than espresso, will naturally show less.

Is thick crema always a sign of Robusta? Not always — very fresh Arabica can also produce noticeably thick crema, but Robusta content is one of the more common and reliable explanations when crema is unusually thick and long-lasting across many shots from the same bag.

Should I try to maximize crema when dialing in a shot? No — dial in for taste and a proper extraction time first; crema thickness is a byproduct of freshness and bean composition, not a target worth optimizing for its own sake.
