Espresso With No Crema
Crema — the tan, slightly persistent foam sitting on top of a properly pulled espresso shot — is mostly trapped carbon dioxide, released from the beans during roasting and still working its way out of the grounds when hot, pressurized water hits them. This is an espresso-specific concept; gravity and immersion methods never build enough pressure to whip that escaping gas into a stable foam the way nine bars of pressure through a fine, compact puck does, which is why "no crema" is never a French press or pour-over complaint.
Use fresher beans
CO2 escapes from roasted coffee continuously from the moment it comes off the roaster, fast at first and more slowly over the following weeks — degassing is exactly why fresh bags of whole bean coffee often have a one-way valve, letting gas out without letting air in. Beans more than three or four weeks past their roast date have already released most of the CO2 that would otherwise get whipped into crema under pressure, so a shot pulled from older beans can be technically well-extracted and still come out with thin, pale, fast-fading foam or none at all. This is the single most common cause of missing crema and the first thing worth checking, since no grind or tamp adjustment puts CO2 back into beans that have already released it.
Check the grind is fine enough to build pressure
Espresso needs a grind fine enough to create real resistance against the pump — roughly the texture of table salt — so that water is forced through under genuine pressure rather than trickling through loosely packed grounds. A grind that's too coarse for espresso lets water find easy paths through the puck, producing a fast, thin shot with little or no crema simply because the pressure needed to strip CO2 out and whip it into foam never actually built up. If a shot runs noticeably faster than the conventional 25–32 second window at your usual dose, grind finer before assuming the beans are the whole story.
Other espresso-specific causes worth ruling out
A very light roast holds less trapped CO2 to begin with than a darker roast of the same age, since less roasting time means less gas generated in the first place — a light-roast shot can show thinner crema than a dark roast even at the same freshness, and that's a roast-level property rather than a mistake. Robusta beans, which are used in some espresso blends specifically because they hold onto CO2 longer and produce noticeably thicker, more persistent crema than arabica, are part of why some espresso blends lean on a small percentage of robusta rather than being pure arabica — see Arabica vs Robusta for the honest case for each. And an old or poorly maintained machine that's lost pump pressure over time can undercut crema independently of the beans or grind entirely, which is worth a service check if fresh beans and a correct grind still don't bring it back.
What to check, in order
- Check the roast date — beans more than three or four weeks old are the most common cause.
- Grind finer if the shot is running noticeably faster than 25–32 seconds.
- Consider roast level and blend — a light single-origin will naturally show less crema than a dark blend with some robusta in it, and that's not a defect.
- If crema still won't build on fresh, correctly-ground beans, have the machine's pump pressure checked.
Crema is not the same problem as channeling
A shot with genuinely no crema and a shot that channels can look similar at a glance — both often run fast — but they're different failures. Channeling is water finding a crack through an unevenly distributed or unevenly tamped puck, and it typically shows up as an uneven, spurting stream and a sour-and-bitter combination in the cup, not just missing foam. Crema absence alone, with an otherwise even, well-timed shot, points to staleness or roast level rather than puck preparation.
