The Grind Size Guide
"Medium-fine" means nothing on its own — grinder settings aren't standardized across brands, so step 4 on one grinder can be finer than step 8 on another. What's actually useful is a physical description you can check by touch and sight, independent of any specific machine's numbers, and matching that description to the method you're brewing rather than to a dial position borrowed from someone else's grinder.
The five textures, described physically
Extra-fine feels almost like flour or powdered sugar between your fingers — no individual granules are really perceptible. Fine feels like table salt, granular but very small, and packs down easily if you press it. Medium-fine sits between table salt and standard granulated sugar — you can feel distinct grains, but they're notably smaller than sugar crystals. Medium feels close to regular granulated sugar or coarse sand. Medium-coarse feels closer to raw sugar or coarse kosher salt, with visibly larger and more irregular pieces. Coarse looks and feels like breadcrumbs or cracked peppercorns — you should be able to see individual particles clearly without looking closely.

Single-serve pods are pre-ground and sealed at the factory, so grind size isn't a variable you control there at all, and instant coffee is a soluble granule rather than ground coffee, so "grind size" doesn't apply to it in the usual sense.
Why the direction of the mistake matters
Too fine for the method packs the bed tighter than the brewing time and pressure were designed for — water struggles to pass through, contact time runs long, and the cup tends toward over-extracted bitterness or, in an extreme case like a coarse-method grinder set far too fine, a brew that barely drains at all. Too coarse does the opposite: water rushes through with too little resistance and too little contact time, producing a thin, sour, under-extracted cup. Neither direction is "safer" than the other — matching grind to method is a two-way constraint, not a single dial you can just turn toward "fine" for a stronger cup, which tends to backfire past a certain point into bitterness rather than strength.
Burr versus blade, and why it matters more here than anywhere else
A burr grinder crushes beans between two consistently spaced surfaces, producing a tight, predictable particle-size distribution around your target setting. A blade grinder chops beans with a spinning blade, producing a much wider spread — some near-powder, some barely cracked, in the same batch — regardless of how long you run it. That spread matters more for some methods than others: immersion methods like French press are relatively forgiving of it because the long steep evens out the difference, while pour-over and especially espresso are unforgiving, because an uneven bed extracts unevenly with no time for that unevenness to average out. If you're grinding for espresso or pour-over on a blade grinder and getting inconsistent results despite following a recipe carefully, the grinder itself is a likely limiting factor before anything else is.
Grind size drifts with roast level and bean age
Darker roasts are more brittle than lighter roasts and tend to grind slightly finer at the same grinder setting, which is one reason a recipe that worked perfectly on one bag can drift when you switch to a different roast level — see light, medium and dark roast for the mechanism. Very fresh, still-degassing beans can also feel slightly different going through a grinder than beans a few weeks old, though this effect is smaller and less predictable than the roast-level one.
Checking a setting before you commit a whole bag to it
If you're not sure whether a new grinder's given setting actually matches one of the textures above, grind a small test batch and rub a pinch between your fingers next to a reference — actual table salt or granulated sugar from your pantry works as a real comparison point, not just a mental image. It's a five-second check that prevents brewing an entire pot at the wrong texture and mistakenly blaming the beans, the ratio, or your technique for what was actually a grind-size mismatch from the start. Adjusting one setting at a time and re-checking against the reference, rather than guessing a large jump, gets you to the right texture faster than trial-and-error brewing full cups at each step.
Dosing by volume when you don't have a scale
