A Chemex is a pour-over dripper in the same broad sense a V60 is — water passes once through grounds and drains by gravity through a paper filter — but its filter paper is 20 to 30 percent thicker than a standard cone filter, and that single difference reshapes almost every other number in the recipe. The thicker paper traps more fine particulate and more of the oils that a thinner filter would let through, producing the cleanest, most tea-like cup of any filter method on this site, at the cost of needing a coarser grind and more water to push through the same resistance in a reasonable time.
Why the grind runs coarser than a V60's
A grind dialed in for a V60's thin filter will stall badly in a Chemex, because the thicker paper adds resistance the grind size alone now has to compensate for. Medium-coarse — visibly coarser than table salt, closer to what you'd use for a coarser pour-over cone — is the standard starting point for a Chemex, one full step coarser than most V60 recipes at a comparable dose. This is the single most common mistake people make switching from a V60 to a Chemex: reusing the V60 grind setting and getting a stalled, over-extracted, bitter result that looks like a technique problem but is really just the wrong grind for a different filter.
A working recipe for the standard 6-cup Chemex
Thirty grams of medium-coarse grounds to roughly 500g of water (a ratio around 1:16 to 1:17) makes a good-sized batch for two to three cups. Bloom with about 60g of water for 30–45 seconds, then pour the remainder in two or three stages, each allowed to draw down partway before the next, aiming for a total brew time of four and a half to five minutes — noticeably longer than a typical V60's two and a half to three minutes, which is the direct result of that thicker filter's added resistance rather than a sign of anything wrong.
The fold matters more than it looks like it should
Chemex filters are folded into a cone with one side three layers thick and the other side single layer; placing the three-layer side against the spout (rather than away from it) slows the drain slightly and helps keep the filter seated against the glass, while the single-layer side against the wider part of the vessel lets water move through a bit more freely there. Getting this backward doesn't ruin a brew, but it does shift the balance of where the water drains fastest, which shows up as a less even bed than the same pour would otherwise produce.
The vessel's shape changes heat retention, too
A Chemex's wide glass body loses heat faster during the brew than a typical narrow V60 carafe or a double-walled dripper setup, especially in a cool room. Preheating the glass with the filter rinse water — swirling it around the walls, not just letting it run straight through — recovers some of that lost heat before the real brew starts, which matters more here than on smaller, better-insulated drippers.
The bloom looks different here too
Because the filter and grind combination drains slower than most drippers, a Chemex bloom often looks less dramatic than the same fresh coffee blooming in a V60 — the gas has less of an easy escape route through the thicker paper, so it tends to push the bed up and hold it there rather than bubbling visibly through the surface. That's normal and not a sign of stale coffee; judge freshness by how much the bed rises and how long it holds, not by how energetically it bubbles.
Batch size is where a Chemex earns its keep
A Chemex scales up more comfortably than most single-cup drippers — the standard 6-cup, 8-cup and 10-cup vessels are sized for genuinely serving multiple people from one brew, unlike a V60, which gets awkward well before you're pouring for four. If you're regularly brewing for more than two people, the recipe above scales linearly (multiply both the coffee and water by the same factor), though total brew time creeps up somewhat at larger batches since a deeper bed adds its own resistance on top of the filter's.
Wood collar and glass-only versions behave identically
The classic wood-collar-and-leather-tie Chemex and the newer handle-only glass versions brew identically — the collar is a handling and insulation choice, not a brewing one. Neither version changes the filter, the glass shape, or the flow characteristics that the recipe above is built around.
Where a Chemex brew goes wrong
- Using a V60 grind setting. Covered above, and the single most common Chemex complaint that traces back to a filter mismatch rather than a real technique error.
- Buying generic pour-over filters instead of Chemex-specific ones. A thinner off-brand filter in a Chemex behaves like a different brewer entirely and throws off every number in a recipe written for the real thing.
- Skipping the fold orientation. A small detail, but one that shifts drain evenness for free once you know to check it.
- Not preheating the glass. Especially relevant in a cold kitchen, where an unheated Chemex pulls down brew temperature more than a smaller vessel would.
- Pouring one continuous stream instead of staged pours. The thicker filter is already slowing the drain; a single fast pour on top of that resistance is more likely to overflow the cone than it would be on a faster-draining V60.
A well-brewed Chemex batch also holds its flavor on a warming plate or in a thermal carafe better than most filter methods, since the initial clarity leaves fewer oils and fines behind to break down and turn stale-tasting as the pot sits — worth knowing if you're brewing ahead of a morning rather than drinking immediately.
Against a V60, the choice mostly comes down to how clean you want the cup and how much time you're willing to spend on a slower drain — Chemex trades a couple of extra minutes and a coarser, more forgiving grind for a noticeably lighter body.
