Siphon brewing looks nothing like pour-over — glass bulbs, an open flame or halogen burner, water visibly rising and falling through a tube — but both methods end the same way: brewed coffee passing through a filter into a clean vessel below. What happens before that final filtration is where the two methods completely part ways.

Immersion under vacuum versus a single gravity pass

A siphon heats water in its lower chamber until vapor pressure forces it up into an upper chamber holding the grounds, where it steeps in full contact for a minute or two — much closer to a short French press immersion than to pour-over's continuous single pass. Take the heat away and the whole process runs in reverse: falling pressure in the lower chamber draws the steeped coffee back down through the filter, leaving the spent grounds behind up top and clean coffee collecting below. Pour-over never steeps at all in that sense; water passes through the bed once, on its way out, with the filter doing continuous work the entire time rather than a single release at the end.

Effort and equipment are not remotely comparable

Pour-over needs a dripper, a filter, and a kettle — the whole setup fits in a cupboard and costs under $50 to start. Siphon needs a heat source (often a dedicated butane or halogen burner sold specifically for the purpose), two glass chambers, a stand, a stirring paddle, and considerably more attention to timing and heat control throughout the brew. This is not a beginner's first manual method, and it's priced and equipped accordingly.

The theater is part of the actual appeal

Watching water climb a glass tube against gravity, bloom and steep in a bubbling upper chamber, then rush back down as heat is removed is genuinely part of why people brew siphon — it's a visual process in a way no other method on this site is, closer to a small tabletop demonstration than a purely functional brew. If that ceremony has no appeal to you, siphon's added cost and complexity buy you very little pour-over doesn't already deliver.

Ratio numbers overlap almost completely

Siphon's 1:13 to 1:16 span sits close enough to pour-over's own 1:15-to-1:17 window that a recipe built for one gives a reasonable starting point for the other, despite the very different mechanics producing those numbers — siphon's brief immersion phase happens to land in roughly the same strength territory as pour-over's single pass. Temperature control is siphon's genuine technical edge

Because siphon brews at a temperature you're actively watching and controlling via the heat source, it offers more precise temperature management during the actual extraction than most pour-over setups manage with a kettle that's already cooling from the moment it's poured. For someone chasing very specific temperature-sensitive flavor differences in a single-origin bean, that control is a real, if niche, advantage.

Cleanup and breakage risk

Pour-over cleanup is lifting out a spent paper filter and rinsing a dripper — fast and low-risk. Siphon involves glass chambers that need careful handling while still warm, a cloth filter that needs regular washing and occasional replacement, and a genuinely higher risk of a dropped or cracked chamber than anything in a pour-over setup. That fragility is a real ownership cost beyond the purchase price.

Batch size and everyday practicality

Pour-over scales reasonably from a single mug to a couple of servings with a bigger cone. Siphon is built and sold mostly around smaller bulb sizes meant for one to three servings, and the extra setup time per brew makes it a poor fit for a household wanting quick coffee for several people on a weekday morning — it's suited to occasions where the brewing itself is part of the experience, not a chore to get through.

Grind requirements sit close together

Both methods use a medium grind broadly in the same range — siphon slightly coarser than a fast V60, closer to what a Kalita Wave or Clever Dripper would want — so a burr grinder dialed in for one gets you most of the way to the other, unlike the much bigger grind gap between, say, espresso and French press. This is one of the few places the two methods genuinely converge.

Deciding if the ceremony is worth it

Choose pour-over for everyday brewing — fast, cheap, and genuinely excellent when done with care. Choose siphon if the visual process and precise temperature control appeal to you specifically, and you're willing to pay in cost, fragility, and setup time for a brewing method that's as much a small ritual as it is a way to make coffee.
