Siphon: The Full Method Guide

A siphon brewer — sometimes called a vacuum pot — uses heat to push water up into a full immersion steep and then lets a vacuum pull the filtered coffee back down as it cools, combining two different physical mechanisms in one brew. Water in the lower globe is heated until rising vapor pressure forces it up a tube into the upper chamber, where it fully immerses the grounds almost exactly the way a French press does. Once the heat is removed, the vapor in the lower globe cools and contracts, creating a vacuum that pulls the now-filtered coffee back down through a cloth or paper filter at the base of the upper chamber — a mechanism no other method on this site uses.

Why the upper chamber runs hotter than a kettle-poured brew

Water arriving in the upper chamber via vapor pressure is close to boiling, hotter than the 195–205°F window most pour-over and immersion recipes target with a kettle. Combined with full immersion contact — no gravity-fed drain diluting the exposure the way a filter method would — a siphon brew at full boiling temperature for too long extracts fast and hard. This is why siphon recipes lean toward a medium grind, coarser than a typical pour-over's medium-fine, and a relatively short steep once the water has fully risen: the heat is already doing more extraction work per minute than almost any other method here, so the timing has to compensate downward.

The stir is a timed step, not an afterthought

Once the water rises into the upper chamber, the grounds need to be stirred to break up dry clumps and start the steep evenly — usually once as soon as the water arrives, and again about thirty seconds before removing the heat, to make sure the whole bed extracted evenly rather than just the surface layer that first touched the rising water. Skipping the second stir is a common reason for an uneven, partially under-extracted result even when the total steep time looks correct on a stopwatch.

Timing the heat removal is the real skill here

Where a French press's timer starts and ends the steep, a siphon's steep effectively ends only when you remove the heat source, because that's what starts the vacuum drawing the coffee back down. Leaving the heat on longer than intended extends the steep past your target without any clear signal until the coffee is already over-extracted; a total steep of about 60–90 seconds after the second stir, at a heat source you're actively watching rather than one left running in the background, is the standard target for a medium-bodied result.

Cloth versus paper filters produce genuinely different cups

A reusable cloth filter, the traditional choice, lets slightly more body and oil through than paper, closer to a French press's fullness while still being meaningfully cleaner because the vacuum draw pulls the liquid through more evenly than gravity alone. A paper filter produces the cleanest, lightest-bodied cup of the two, closer to a V60's clarity. Neither is more "correct" — they're genuinely different textures from the same brewer, and cloth filters need to be kept wet and refrigerated between uses or they develop off-flavors that ruin the next several batches.

Heat source choice changes how much control you actually have

A dedicated butane siphon burner gives fine, immediate control over how fast the water rises and how gently it simmers once it's up in the upper chamber — turning the flame down the moment the water finishes rising is a real, usable adjustment. An induction or halogen beam heat source, more common on countertop siphon setups, is harder to fine-tune in the moment and tends to keep pushing heat at a fixed level, which is part of why stovetop-style siphon brewing rewards more attention to the stir-and-remove timing described above — the heat source itself is doing less of the fine-tuning work for you.

The theatrics are real, but they're also diagnostic

Siphon brewing is often sold on its visual drama — the rising column of water, the eventual rush back down through the filter — but watching that process closely also tells you useful things a sealed brewer never shows. Water that rises unevenly or slowly usually means the seal between the upper and lower chambers isn't seated correctly. A vacuum draw that stalls partway, leaving coffee sitting in the upper chamber, almost always means the grind was too fine for the cloth or paper filter in use and needs to go coarser next time.

Where the vacuum timing actually breaks down

  • Skipping the second stir before removing heat. The most common cause of an uneven, partially under-extracted cup that otherwise looks like it followed the recipe.
  • Leaving the heat on too long "to be safe." The near-boiling upper chamber extracts fast; extra time here does more damage than the same extra time would on a cooler-brewing method.
  • Using a pour-over-fine grind. The combination of full immersion and near-boiling water at a fine grind over-extracts quickly; a coarser grind than you'd expect is correct here.
  • Letting a cloth filter dry out between brews. A dried-out cloth filter picks up stale, musty flavors that transfer into the next several cups.
  • Rushing the vacuum draw. If the coffee isn't fully drawn back down into the lower globe before you disassemble, you'll spill hot coffee and grounds together — let the vacuum finish on its own.

Cleanup is heavier than most other methods here too — two glass chambers, a tube, and either a cloth filter that needs storing wet or a paper one that needs replacing — which is part of why siphon brewing tends to be a deliberate, occasional ritual for most people who own one rather than a daily routine the way a pour-over or a French press often is.
