The Kalita Wave's flat-bottomed basket and three small holes are a deliberate departure from the V60's single-hole cone, and the difference in shape changes the brewing experience more than the two methods' similar-looking wave-patterned filters would suggest. A flat bed keeps the coffee at an even depth across its whole surface — no low point at a cone's tip for water to funnel toward — and three small holes spread the exit points out instead of concentrating drainage through one spot. The combined effect is a slower, steadier flow that's dramatically less sensitive to exactly where or how evenly you pour than a V60's fast-draining single hole.
Why pour technique matters less here, and grind runs slightly coarser
Because the flat bed and small holes already do meaningful work evening out the flow on their own, a pour that lands slightly off-center or isn't a perfect spiral doesn't punish the cup the way it would on a V60 — the geometry itself is buffering some of that inconsistency. That buffering has a cost, though: the same design that slows and steadies the flow also pushes the grind up a notch from a V60's setting, sitting closer to the coarse end of medium-fine, or the bed simply won't clear in a reasonable time. Carry a V60's exact setting over instead, and the flatter, more resistant bed adds drag that grind was never built to fight, turning the brew slow, muddy and over-extracted.
The staged-pour numbers for a flat bed
Twenty grams of medium-fine grounds — a touch coarser than you'd run in a V60 at the same dose — is a standard dose for roughly 300–320g of water, landing near 1:15 to 1:16. Start with about 40g to wet the bed and hold there for 30 to 45 seconds before the gas has finished escaping, then add the rest across two or three more additions, giving the bed a chance to fall partway each time rather than topping it up while it's still nearly full. Three to three and a half minutes total is typical here — longer than a V60's two and a half to three minutes, simply because the flatter bed and smaller holes add resistance a V60 was never designed to fight.
The wave-shaped filter has to be the real thing
Kalita Wave filters have their own distinctive fluted, wave-like pattern that only contacts the flat basket at the ridges, leaving channels underneath for water to reach all three holes evenly. A generic flat-bottomed filter not cut to that wave pattern can seat flush against the basket instead, blocking some of those channels and creating exactly the kind of uneven drainage the design exists to prevent — this is a more consequential substitution than swapping filter brands on a V60, where the ribs do more of that structural work regardless of the filter's exact shape.
Why it suits a less experienced or less attentive pour
Because the flat bed and multiple small holes already resist channeling better than a single-hole cone, the Kalita Wave is often recommended as the easier of the two to learn on, or to use on a rushed morning when a careful spiral pour isn't realistic. That forgiveness doesn't mean pour quality is irrelevant — an extremely uneven pour will still show up in the cup — just that the margin for a merely decent pour is wider than it is on a V60.
Stainless steel versus glass or ceramic bodies
Kalita Wave drippers are commonly sold in stainless steel as well as glass and ceramic, and steel holds heat noticeably better through a brew than either of the other two materials, which cool on contact unless properly preheated. For a method that already runs a slightly longer drawdown than a V60, that extra heat retention is a real, if modest, advantage — a steel Kalita Wave finishing its three-minute brew loses less temperature over that time than a glass one would, all else equal.
The three-hole design also changes how you judge an uneven pour
Watching the bed drain on a V60 gives you one clear tell for unevenness — grounds pale on one side, dark on the other, pointing straight at the single hole. A Kalita Wave's three holes spread that signal out, so a mildly uneven pour is harder to spot visually even though the flat bed is already absorbing most of the consequence of that unevenness before it reaches the cup. This is part of why the Kalita Wave has a reputation as more consistent cup-to-cup even among less experienced brewers, independent of whether their pour technique is actually improving.
Where the name comes from, and why it matters for buying filters
"Wave" refers to the filter's fluted pattern, not the brewing motion — Kalita's own wave filters are sized and shaped specifically for the 155 and 185 basket sizes the company sells, and the two aren't interchangeable, so it's worth checking which size dripper you own — stamped on the underside of the plastic, steel or ceramic base — before buying a box of filters. A 155 filter seated in a 185 basket sits too small to reach the walls properly, undoing the flat-bed design's whole advantage regardless of how carefully you pour, and it's an easy mistake to make since both filter sizes look similar folded flat in the box, and the difference only becomes obvious once you're trying to seat one against a basket it wasn't cut for, by which point the brew is already well underway and harder to correct mid-pour.
V60 habits that don't carry over to a Kalita Wave
- Using a V60-tuned fine grind. The flatter, slower-draining bed stalls at a grind that would run fine in a V60; go a step coarser.
- Buying generic filters instead of the wave-shaped ones. Covered above — this defeats part of the design's whole purpose.
- Assuming the forgiving geometry means pour quality doesn't matter at all. It matters less here, not not at all; a wildly uneven pour still shows up in an uneven cup.
- Judging drawdown time against V60 benchmarks. A Kalita Wave finishing in three minutes isn't running slow — that's within its normal, expected range given the flatter bed.
Against a V60, the Kalita Wave gives up some of that dripper's speed and hands-on control in exchange for a flow that's far less sensitive to an imperfect pour.
