The Hario V60 is the fastest-draining common pour-over dripper, and almost everything distinctive about brewing on it follows from that one fact. Spiral ribs running down the inside of the cone keep the filter from sealing flat against the plastic or ceramic wall, and a single large hole at the bottom lets water leave as soon as it clears the bed — there's very little built-in resistance compared to a flat-bottomed dripper with several small holes, which means the V60 puts almost all of the control for evenness and contact time directly in the hands of whoever is pouring, rather than in the geometry of the dripper itself.
Why the recipe leans finer and the pour leans deliberate
Because so little resistance comes from the dripper itself, a V60 recipe compensates with a slightly finer grind than a flatter-bed dripper would use at the same dose, to hold enough contact time before the water escapes through that single large hole. Medium-fine, similar to granulated sugar with a touch more texture, is standard for a 20g dose aiming for a two-and-a-half to three-minute total brew time. Pour technique carries the rest of the burden: a slow, controlled spiral pour that keeps the whole bed wetted evenly does far more for a V60's final cup than it does on a flatter, slower-draining dripper, where the dripper's own geometry is already doing some of that evening-out work.
The spiral-pour numbers for a 20g dose
Bloom with roughly 40g of water (about twice the coffee's weight) for 30–45 seconds. Pour the remaining water in two to four stages, each in a slow, controlled spiral moving from the center outward and back, letting the bed draw down partway between pours. Total water around 300–320g for a 20g dose lands near a 1:15 to 1:16 ratio. A drawdown finishing well under two minutes usually means the grind needs to go finer; one still dripping past three and a half minutes usually means coarser, or that the pour agitated the bed more than intended.
The single hole makes off-center pouring a real problem
A flat-bottomed dripper with three small holes spreads the exit points across the bed, which buffers against a slightly off-center pour. The V60's one large hole means water poured consistently toward one side of the cone can develop a fast lane straight down to that hole while the opposite side of the bed barely gets touched — a milder version of channeling that shows up as uneven color in the spent grounds after brewing, paler on one side and darker on the other. Pouring in a deliberate spiral rather than a fixed spot is as much about avoiding this as it is about overall saturation.
Paper thickness and the ridges both matter
V60 filters are notably thinner than a Chemex's or a Kalita Wave's, which is part of why the V60 drains faster than either at a comparable grind — less resistance from the paper itself, on top of the single large hole. The plastic or ceramic ribs need to actually make contact with the filter along its length for the fast-drain design to work as intended; a filter that's collapsed flat against the wall in spots (common with cheaper filters that don't hold their shape well) defeats part of the dripper's own design and can produce uneven drainage that looks like a pour problem but isn't.
Plastic, ceramic and glass versions drain at slightly different rates
A plastic V60 retains heat somewhat better through the brew than ceramic or glass, both of which pull heat out of the water on contact unless preheated properly — a ceramic or glass V60 poured without a proper rinse-and-preheat step can run measurably cooler by the end of the brew than a plastic one, which shows up as a slightly flatter, less sweet cup from otherwise identical technique. None of the three materials changes the dripper's fast-draining geometry; the difference is purely thermal.
The Tetsu Kasuya 4:6 method is a V60-specific technique worth knowing
Rather than a simple bloom-plus-two-stages approach, the 4:6 method splits the total water into five pours: the first two pours (40% of total water) are tuned to control sweetness and acidity balance by adjusting their relative sizes, and the last three (60%) are poured at even intervals to control strength through how much total agitation the bed sees. It's a genuinely V60-specific technique — it depends on the dripper's fast drain and single-hole responsiveness to timed pours in a way that wouldn't translate the same way to a slower, more forgiving dripper.
Pour mistakes a single hole won't forgive
- Pouring in one spot instead of a spiral. The single hole punishes this more than any other common dripper shape; see the channeling discussion above.
- Using a Kalita Wave or Chemex grind setting. Both of those drain slower by design; the same grind in a V60 often runs too fast and tastes thin and sour.
- Judging doneness purely by total time. A brew that finishes in the "right" window but shows visibly uneven grounds afterward still had a pour problem worth fixing next time.
- Buying cheap filters that don't seat against the ribs. A collapsed filter quietly defeats the dripper's whole design.
A V60 is also the dripper most worth practicing on deliberately if you want to get better at pour technique generally — because it gives so little help from its own geometry, improvement in your pour shows up directly and quickly in the cup, in a way a more forgiving dripper would mask for longer.
Against the Kalita Wave, the V60 trades forgiveness for speed and control — a confident, practiced pour gets more out of a V60 than the same effort gets out of a flatter, slower dripper, while a less consistent pour shows up more clearly in the cup.
