A Vietnamese phin is a small metal filter that sits directly on top of a cup: a perforated chamber holds the grounds, a flat perforated disc rests loosely or is screwed down on top of them, and hot water poured into that chamber drips slowly through the compact bed by gravity alone, with no pouring technique involved once the water's been added. It sits somewhere between a slow filter method and a near-immersion steep — the water doesn't flow continuously the way a pour-over's does, but sits in shallow contact with the bed as it works its way through, closer in spirit to how a Moka pot's compacted basket resists flow than to a V60's fast single-hole drain.
The press disc replaces pour technique as the flow control
Every other filter method on this site controls flow rate mainly through grind size and, for manual pours, technique. A phin has no pouring step to vary, so the press disc's tightness becomes the equivalent adjustment: screwing it down firmly onto the grounds compacts the bed and slows the drip, producing a stronger result over a longer time, while leaving it looser or floating lets water move through faster for a lighter, quicker result. This is the phin's real, hands-on variable, and it's worth adjusting deliberately rather than tightening it the same amount every time regardless of grind or dose.
Grind sits in the middle, dictated by the filter's small holes
The phin's perforations are considerably smaller than a French press's mesh but coarser than a paper filter's pores, so a medium-coarse grind — finer than French press, coarser than pour-over — is the standard target. Too fine, and the small holes clog almost completely, especially if the press disc is screwed down tight on top of it, stalling the drip to a crawl or stopping it outright. Too coarse, and water passes through with too little resistance to extract properly in the few minutes a phin typically takes to fully drain.
Why it's traditionally brewed unusually strong
Vietnamese coffee is classically served over a layer of sweetened condensed milk already sitting in the glass, which the finished coffee slowly mixes into as it drips down — a combination called cà phê sữa đá when served iced. Because that condensed milk adds substantial sweetness and body on its own, the coffee itself is brewed deliberately strong, closer to the intensity of a Moka pot than a drip-strength brew, so the final mixed drink balances rather than getting lost under the milk. A phin brewed to typical drip-coffee strength and mixed with condensed milk the traditional way tends to taste flat and overly sweet, missing the contrast the stronger brew is built to provide.
The phin recipe, disc tightened just enough
Fifteen grams of medium-coarse grounds to about 90–120ml of hot water, just off the boil. A small bloom — a splash of hot water to wet the grounds and let them settle evenly before filling the chamber the rest of the way — helps even out the eventual drip, similar in principle to a pour-over's bloom even though nothing here is actively poured afterward. Screw the press disc down snugly but not forcefully, fill with the remaining water, and let it drip fully through, typically five to six minutes for a full chamber.
Metal versus the increasingly common plastic phin
Traditional phins are aluminum or stainless steel, and steel holds up to repeated use and washing far better than the thinner aluminum versions, which can dent and develop an uneven seat against the cup rim over time. Cheaper plastic phins, sold widely as a lightweight travel option, don't retain heat the way metal does, which can mean a slightly cooler, slower extraction than the same grind and water temperature would produce in a metal chamber — worth accounting for with a slightly finer grind or hotter starting water if a plastic phin consistently runs weak.
Serving it hot versus over ice both start identically
Cà phê sữa đá, the iced version, starts with the exact same strong hot brew described above, dripped directly over condensed milk and then poured over ice once mixed — the ice comes after brewing, not during it, so the drip itself is never brewed any differently for a cold serving. This is a useful thing to know if a phin recipe elsewhere seems to disagree with this page on strength: the difference is almost always about serving temperature, not about how the coffee itself was extracted.
Misusing the press disc, and other phin-specific slips
- Screwing the press disc down too hard. Can compact the bed enough to stall the drip entirely, especially paired with a grind that's already on the fine side.
- Grinding too fine for the filter's holes. The single most common cause of a phin that clogs or drips at a crawl; go coarser than you would for a paper-filtered pour-over.
- Brewing at drip-coffee strength and adding condensed milk anyway. The traditional balance assumes a stronger brew than most filter methods target; see the strength note above before assuming the milk ratio is off.
- Skipping the small bloom. A quick wetting pour before filling the chamber evens out the drip the same way a bloom helps any other gravity-fed method.
