Espresso forces hot water through a tightly compacted bed of very finely ground coffee at around nine bars of pressure, extracting a concentrated shot in 25 to 32 seconds. That combination — extreme fineness, extreme pressure, extreme speed — is what no other method on this site attempts, and it's why espresso has by far the smallest margin for error of any brewing style. A pour-over that runs thirty seconds long is barely noticeable. An espresso shot that runs five seconds long can be the difference between balanced and undrinkable, because the entire extraction happens in the time it takes to say a short sentence.

Grind is not one variable among several — it's the dominant one

On a pour-over or French press, grind is one lever among several roughly equal ones. On espresso, it's the lever everything else is tuned around. Water at nine bars finds any path of least resistance instantly, so the puck's resistance has to come entirely from particle size and how evenly those particles are packed — there's no long contact time or gentle gravity flow to smooth over an uneven grind the way there is with a French press or a slow pour-over. A change in grind that would be imperceptible on a Chemex can turn a 25-second shot into a 45-second one on an espresso machine, which is why dialing in espresso means adjusting grind in tiny increments and re-pulling, not changing three variables at once.

The dose-to-yield ratio, not a water volume

Espresso is the one method on this site where the ratio describes liquid output, not water poured in, because pressure leaves a meaningful amount of water trapped in the spent puck that gravity-fed methods don't hold onto. An 18g dose yielding roughly 36g of liquid espresso is a common 1:2 starting ratio; pulling it shorter, toward 1:1.5, produces a more concentrated ristretto-style shot, and longer, toward 1:2.5 or beyond, produces a more diluted lungo. Puck preparation matters as much as the grinder setting

A grinder dialed in perfectly still produces a bad shot if the grounds aren't evenly distributed and level before water hits them, because pressurized water finds and exploits any gap in the puck's density instantly. Distributing the grounds in the portafilter basket before tamping (a technique often called WDT, using a fine tool to break up clumps) and tamping level rather than at an angle both matter more than tamping hard — a firm, level, even tamp beats an inconsistent hard one every time.

Channeling: the failure mode unique to pressure

Channeling is water finding a crack or a low-density spot in the puck and rushing through it almost unimpeded, while the surrounding coffee barely sees any water at all — the shot pours fast, thin and sour from the channel's path and simultaneously bitter from the tiny amount of grounds that got wildly over-extracted around the edges of that channel. It's the pressure-method version of the same physics that causes channeling on a pour-over, just compressed into thirty seconds and made worse by how much force is pushing water toward any weakness. What crema tells you and what it doesn't

Crema, the tan foam on top of a fresh shot, is trapped CO2 and oils emulsified under pressure — it fades within a few weeks of the roast date regardless of how well you pull the shot, which is why an espresso with no crema is often a freshness problem rather than a technique one. Pre-infusion softens the shock, where the machine allows it

Some espresso machines can wet the puck briefly at low pressure before ramping up to full pressure, rather than hitting a dry, room-temperature puck with nine bars all at once. That brief pre-infusion lets the puck swell slightly and settle before the main extraction, which reduces the odds of a hairline crack turning into a full channel once real pressure arrives. Machines without this feature rely entirely on distribution and tamp technique to prevent that same crack from forming in the first place, which is part of why entry-level espresso setups reward careful puck prep more than machines with pre-infusion built in.

Basket size and dose need to agree

A portafilter basket is stamped for a dose range — commonly 18g for a "double" basket — and under-filling or over-filling it changes the puck's depth and therefore its resistance independently of grind. A basket under-filled by several grams leaves the puck too shallow to build proper resistance even at a correct grind setting, producing a fast, thin shot that looks like a grind problem but isn't one; matching dose to the basket's stamped range removes that variable before you start adjusting anything else.

What actually goes wrong, roughly in order

  • Grinding a stale, several-week-old bag as if it behaved like a fresh one. Freshly roasted coffee off-gasses more CO2 and pulls differently day to day; espresso exposes that drift faster than any other method.
  • Uneven distribution before the tamp. Covered above, and the single most common cause of channeling on an otherwise correctly ground shot.
  • Chasing time instead of taste. A shot that hits 28 seconds on the clock but tastes sour or harsh still has a grind or distribution problem — time is a diagnostic, not the goal itself.
  • Ignoring humidity and temperature swings. The same grind setting can pull differently on a humid day versus a dry one, since ground coffee absorbs ambient moisture.
  • Judging a shot by volume instead of weight. Crema volume varies with freshness even at a correct yield; weighing the liquid out is the only reliable way to hit a target ratio.

Espresso sits closest, in spirit, to Moka pot brewing — both use pressure rather than gravity — though a Moka pot's much lower pressure and longer contact time make it a genuinely different extraction, not a cheaper espresso.
